Potato Pancakes

Happy Hanukkah!

Hanukkah starts next week, so here's an easy recipe for potato latkes you can make for dinner one night!

 

Ingredients:

  • 3 cups mashed potatoes
  • 1 tsp kosher salt
  • 1/2 tsp ground pepper
  • 1/2 tsp onion powder
  • 1/4 cup cream cheese
  • 1 3/4 cups pancake mix/biscuit mix
  • 2 eggs
  • 1/4 cup milk
  • 1-2 tbsp olive oil
  • 1-2 tbsp butter


1. Combine mashed potatoes, salt, pepper, onion powder, cream cheese, pancake/biscuit mix and eggs until a thick batter forms.

2. Heat 1 tbsp olive oil and one tbsp butter in a non-stick skillet over medium low heat. Add potato batter to make 3" inch pancakes. Cook on first side about 3 minutes and then flip and cook on 2nd side for about 3 minutes.

3. Repeat with remaining batter, adding additional olive oil and butter in needed.

4. Serve with applesauce, sour cream and sauted onions.

*Also great topped with an egg
