Aunt D's Two Apple Salad

One of our favorite side salads is made of apples and comes from my husband's aunt.  It's colorful, crunchy, and the perfect mix of sweet and tangy.  We usually double the recipe so we have plenty of leftovers!

Aunt D's Two Apple Salad

Ingredients:

    * A few stalks of celery
    * 1 medium Red Delicious apple
    * 1 medium Granny Smith apple
    * 1/4 cup finely shredded carrot
    * 1/4 cup sliced green onions
    * 1 tablespoon water
    * 1 tablespoon white wine or apple cider vinegar
    * 2 teaspoons olive oil (you can use vegetable oil if you think olive oil has too strong a taste)
    * 1/2 teaspoon sugar
    * 1/4 teaspoon salt.

Directions:

   1. Trim your celery and cut into julienne strips.
   2. Quarter your apples and also cut into julienne strips.  You can cut then into strips by hand, but a mandolin is much quicker and easier, and makes more uniform pieces.  Leave the skin on the apples for texture and color.
   3. Combine celery, apples, onions, and carrot in a medium bowl; toss well and set aside.
   4. Combine water, vinegar, oil, sugar and salt in a small bowl.  Stir with a wire whisk until blended.
   5. Add the celery mixture, tossing gently to coat.


Makes 4 one-cup servings.
