Mintylicious Mookies

I am a sucker for anything mint. When my kids bring home their Halloween candy, I’m the mom searching and hoarding all the York Peppermint Patties. Don’t even ask about my wallet when Girl Scout season comes around. Unfortunately, I pass my trait of mint loving down to my little ones. I was browsing through the internet and saw a yummy recipe for Oreo stuffed chocolate chip cookies and immediately I had a great idea to totally “mint” out the recipe, so here goes my homemade “Mintylicious Mookies”. I hope you enjoy them as much as we did.

Ingredients

§  2 boxes of Sugar cookie mix.

§  1 ½ c. Andes baking mint pieces.

§  1 ½ c. Chocolate chips.

§  ½ to 1 tsp mint extract. (our Publix has a tube of mint flavor by the baking cups and candles)

§  1 stick butter or 1c. margarine (softened)

§  2 eggs.

§  20 drops of green food coloring.

§  1 box of mint Oreos.

Directions

  1. Preheat oven to 350*.
  2. Mix sugar cookie mix, eggs, and butter together until mixed well.
  3. Fold Andes mint pieces and chocolate chips into mix.
  4. Add food coloring. ****This is what it should look like-
  5. Mix with mixer on low setting until mixed well.
  6. Using about a tbsp of dough make two balls.
  7. Place one ball on top of oreo and the other on the bottom.
  8. Flatten together and seal edges.
  9. Grease cookie sheet well.
  10. These cookies are BIG, so if you feel they are too large, they are probably just right!
  11. Bake at 350* for about 15 minutes or until edges are lightly browned.
  12. Let cool at least 5 minutes (this is the hardest part!)

***** Enjoy! You can add some extras like a chocolate drizzle on top or mint chocolate ice cream. These are rich and I promise they are the best cookies ever!
