Ingredients
§ 2 boxes of Sugar cookie mix.
§ 1 ½ c. Andes baking mint pieces.
§ 1 ½ c. Chocolate chips.
§ ½ to 1 tsp mint extract. (our Publix has a tube of mint flavor by the baking cups and candles)
§ 1 stick butter or 1c. margarine (softened)
§ 2 eggs.
§ 20 drops of green food coloring.
§ 1 box of mint Oreos.
Directions
- Preheat oven to 350*.
- Mix sugar cookie mix, eggs, and butter together until mixed well.
- Fold Andes mint pieces and chocolate chips into mix.
- Add food coloring. ****This is what it should look like-
- Mix with mixer on low setting until mixed well.
- Using about a tbsp of dough make two balls.
- Place one ball on top of oreo and the other on the bottom.
- Flatten together and seal edges.
- Grease cookie sheet well.
- These cookies are BIG, so if you feel they are too large, they are probably just right!
- Bake at 350* for about 15 minutes or until edges are lightly browned.
- Let cool at least 5 minutes (this is the hardest part!)
