Fresh Strawberry Bundt Cake

Now...who doesn't love strawberry cake?  This one was a HUGE hit at my house.  It was devoured in one day.  The fresh strawberries really come through.
 

Ingredients:

 2 1/2 cups sifted cake flour

2 1/2 teaspoons baking powder

1/4 teaspoon of salt

1 stick of butter (8 tablespoons)

1 1/2 cups sugar

2 large eggs

1 teaspoon vanilla

1 cup fresh crushed strawberries

powdered sugar for garnish

 

Directions:
1. Preheat oven to 350 degrees F.

2. In large bowl sift together your flour, baking powder and salt.

3. In a separate bowl, combine butter, sugar, eggs, and vanilla.

4. Beat for a total of 3 minutes, scrapping the sides of the bowl.

5. Then add flour mixture to creamed mixture

6. Beat for 2 minutes.

7. Fold in crushed strawberries until well mixed.

8. Pour batter into a greased and floured bunt pan.

9. Bake in pre-heated oven for 25-30 minutes, or until a knife comes out clean.

10. Cool on wire rack and turn out onto a dish.

11. Sift powedered sugar all over top of cake.
