Spring Sugar Cookies

By Danielle Moore, Findlay OH Publisher Mom April 6, 2011

Here is a great sugar cookie that uses some whole wheat flour to make it a little better for you.  This dough works best with large cookie cutters.  We used spring shapes like flowers and butterflies!

Sift together and set aside:

1 cup unbleached white flour
1 cup whole wheat flour
1 tsp baking powder
½ tsp salt

Cream until softened (using mixer):

2/3 cup butter or margarine
1 t vanilla

Add gradually, creaming until fluffy after each addition:

3/4 cup sugar

Add in halves, beating thoroughly after each addition:

1 egg, well beaten

Gradually stir in dry ingredients and blend well. Chill thoroughly in refrigerator.
Lightly grease cookie sheets.
Roll dough 1/8 in. thick on lightly floured surface. Cut dough with a floured large cookie cutter. Sprinkle tops of cookies with sugar.

Bake at 375 degrees 10 to 12 minutes. Remove immediately to rack to cool.
